Crispy Tofu

Ingredients
- 1 block of tofu
- Olive oil, for baking
- Salt and cornstarch, for coating tofu
- Green onions and sesame seeds, for garnish
For the sauce:
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 3 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 tablespoon ketchup
- 1/2 cup vegetable broth
- 2 cloves garlic, minced
- Chili flakes, to taste
- 2 teaspoons cornstarch (3 teaspoons for a thicker sauce)

Prepare the Tofu
- Preheat your oven to 400°F (200°C).
- Break the tofu into small, uneven pieces with your hands. Aim for bite-sized chunks that vary in shape and size.
- Toss the tofu pieces in olive oil, salt, and a light coating of cornstarch.
- Arrange the tofu on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, or until the tofu is crispy and golden brown.

Make the Sauce
- While the tofu is baking, prepare the sauce. In a small bowl, whisk together soy sauce, maple syrup, apple cider vinegar, ketchup, vegetable broth, minced garlic, and cornstarch until well combined.

Combine Tofu and Sauce
- Once the tofu is done baking, heat a non-stick skillet over medium heat.
- Pour the sauce into the skillet and bring it to a simmer.
- Add the baked tofu cubes to the skillet, gently tossing them in the sauce until evenly coated.
- Continue cooking for 2-3 minutes, or until the sauce has thickened and the tofu is heated through.

Serve
- Transfer the Tofu General Tao’s to a serving dish.
- Garnish with sliced green onions and sesame seeds for added flavour and texture.
